3 República Rome Coffee Capsules 

4 Italian Sponge Finger Biscuits

40ml Coffee Liqueur

40ml Marsala

250g Mascarpone Cheese

2 tablespoons Caster Sugar

Cocoa or Grated Chocolate for dusting

(Makes 4 Small Serves)



  • Pour coffee liqueur into a bowl & extract espresso over the top & set aside to cool
  • Break each sponge finger into quarters & place into the bottom of each serving glass
  • Spoon over the espresso mixture & press down gently to soak evenly
  • In a bowl, beat marsala, sugar & mascarpone until soft peaks form
  • Add a generous dollop over the sponge biscuit base
  • Sprinkle with cocoa or grated chocolate 
  • Chill for 30 minutes before serving
